Strawberry Stuffed French Toast
Sweeten your morning with our Strawberry Stuffed French Toast, filled with luscious cream cheese and fresh strawberries—all made with ingredients from the Boise Co-op!
Ingredients:
For the French Toast:
6 thick slices of brioche bread
4 large eggs
3/4 cup milk (or half-and-half for creaminess)
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
Pinch of salt
2 tablespoons butter
For the Filling:
8 oz cream cheese, softened
1/3 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh strawberries, sliced
For Topping:
Condensed milk
Fresh strawberries for garnish
Whipped cream (optional)
Instructions:
Mix softened cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth. Fold in the sliced strawberries. Set aside.
In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and a pinch of salt until well combined.
Take a slice of bread and spread a generous amount of the cream cheese filling on one side. Top with another slice of bread to create a sandwich. Repeat with the remaining slices.
Heat a large skillet or griddle over medium heat and add a little butter or oil to coat the pan.
Dip each stuffed sandwich into the egg mixture, making sure both sides are well-coated.
Place the dipped sandwiches on the skillet and cook until golden brown on both sides, about 3-4 minutes per side. You may need to work in batches, depending on the size of your skillet.
Cut the stuffed French Toast in half and serve warm with condensed milk and strawberries. Enjoy!
