Creamy Oven Baked Chicken Thighs

 

These Creamy Oven-Baked Chicken Thighs are comfort food at its finest—made with juicy, tender chicken and rich, savory flavors using fresh, high-quality ingredients from the Boise Co-op Market.

Ingredients:

For Chicken Thighs

• 5 chicken thighs, skinless & boneless, dried with paper towel

• 1 teaspoon poultry seasoning of your choice

• salt & pepper to taste

• 2 tablespoons unsalted butter

For Creamy Sauce

• 2 tablespoons butter

• 2 tablespoons garlic, finely chopped

• 2 tablespoons flour

• 1 cup chicken broth

• ½ cup heavy whipping cream

• ½ cup Parmesan cheese or prieve cheese, finely grated

• salt & pepper to taste

• 2 teaspoons dill, finely chopped for garnish, optional

Instructions:

First, preheat the oven to 375°F. Next, season the chicken thighs with your choice of seasoning, along with salt and pepper on both sides.

Now, melt butter in an oven-proof skillet over medium heat. Add the seasoned chicken thighs and sear for 2-3 minutes on each side until they are golden brown. Once done, transfer the chicken to a plate and set it aside.

To Make the Creamy Sauce:

In the same skillet, melt more butter. Once melted, add minced garlic and sauté for 1 minute, stirring occasionally.

Next, add flour and stir continuously for 1 minute. Slowly pour in the chicken broth and continue to stir for another minute, or until the sauce thickens. Then, add the heavy whipping cream, stirring well. Add cheese, stir again, and taste the sauce. Adjust seasoning with more salt or pepper if needed.

Finally, return the chicken thighs to the skillet, making sure to coat each thigh in the creamy sauce. Place the skillet in the preheated oven and bake uncovered for 30-35 minutes, or until the chicken is cooked through.

Garnish with fresh dill and additional cheese if desired. Enjoy!
