Hawaiian BBQ Chicken Mac & Cheese

 

Say hello to your new comfort food favorite: Hawaiian BBQ Chicken Mac & Cheese! Made with creamy Annie’s mac, juicy BBQ chicken, and a tropical twist — all ingredients sourced from the Boise Co-op.

Ingredients:

  • 2-5 lb Chicken thighs boneless skinless

  • 1 box of Mac n Cheese, cooked according to the package

  • ¾ cups Soy sauce low-sodium

  • ¾ cups Ketchup

  • 1 cup Brown sugar, packed

  • ⅓ cup Chicken broth

  • 2 ½ teaspoons Fresh Ginger grated

  • 2 teaspoons Garlic, minced

  • Avocado for serving

Instructions:

Mix soy sauce, ketchup, brown sugar, broth, ginger, and garlic. Set aside 1 cup of marinade in the fridge.

Add chicken to the remaining marinade, cover, and refrigerate for 6+ hours or overnight.

Grill chicken 3–4 minutes per side, brushing with reserved marinade.

Serve with Mac n Cheese and avocado.
