Greek Chicken Gyro

Ingredients:
Chicken Gyro Marinade
2 lb chicken thighs, fat removed
½ cup Greek yogurt, whole fat
2 tablespoons olive oil
1 tablespoon garlic, minced
2 tablespoons lemon juice
2 teaspoons red wine vinegar
1 tablespoon oregano
1 teaspoon sea salt
pepper to taste
TZATZIKI Sauce
1 cucumber, peeled, grated, and squeezed (makes about ½ cup)
1 ¼ cup Greek yogurt, whole fat
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons dill, chopped
½ tablespoon garlic, finely chopped or minced
salt and pepper to taste
Gyro
4 pita bread or lavash bread wraps
2 tomatoes cubed
1 small red onion, sliced
1 head of lettuce sliced
6 oz feta cheese
Instructions:
Combine all marinade ingredients in a bowl or zip bag. Mix well and marinate for at least 4 hours or overnight.
Preheat the grill to high. Cook the chicken for 3-4 minutes on each side until fully cooked, then slice into strips.
Half the cucumber, remove the seeds, and grate it. Squeeze out excess moisture and mix with the other sauce ingredients. Refrigerate for at least 15 minutes.
Warm lavash or pita bread, spread on TZATZIKI Sauce, add sliced chicken, lettuce, tomatoes, and feta cheese. Wrap or fold and enjoy!
