Shepherd’s Pie
Comfort food, Co-op style. Our Shepherd’s Pie is made with locally sourced potatoes, ground beef, and farm-fresh veggies—all from the Boise Co-op. A hearty classic with a hometown twist.
Ingredients:
3 tbsp avocado oil
1 onion, chopped
1 celery stalk, chopped
2 cups frozen vegetables (chopped carrots, peas, and/or corn)
1 lb ground beef or lamb
2-3 tbsp flour
2 cloves garlic, finely chopped
1½ tsp fresh thyme (or ½ tsp dried)
1½ tsp fresh rosemary (or ½ tsp dried)
1 cup beef or chicken broth
2 tsp Montreal steak spice
1 tbsp Worcestershire sauce
2 tbsp butter, cut into 5 slices
2 lb mashed potatoes (about 4 cups, homemade or leftover)
Sea salt, to taste
Instructions:
Preheat the oven to 400F
Prepare mashed potatoes or use leftover instant pot mashed potatoes (about 4 cups or 2 lb).
Using a cast-iron skillet, preheat the oil over medium heat. Add the onion and celery and sauté for 5 minutes, stirring a few times.
• Next, add frozen veggies and saute for 5 more minutes, stirring few times.
• After, add ground beef and cook for 5 minutes, breaking it apart with a wooden spoon (if the meat produces too much juice, drain it and leave about 2 tablespoons of juice).
• Sprinkle flour over the meat, and saute for 1 minute, stirring continuously.
Then add the garlic and stir for 1 minute.
Finally, add thyme, rosemary, Montreal steak spice, and Worcestershire sauce, and give it a good stir.
Pour in beef broth and season with salt to taste. Cook on low heat, stirring few times for 5 minutes or until the broth thickens. Spread mashed potatoes over the top, add butter slices.
Bake uncovered, until golden brown on top 30-35 minutes. Enjoy!
