Ingredients:

  • 6 eggs hard-boiled, cooked for 10 minutes, peel and cut in half

  • 2 tablespoons mayo

  • 1 tablespoon pickles finely chopped, or use relish

  • 1 teaspoon Dijon mustard

  • sea salt & pepper to taste

  • 1/2 cup flour

  • 2 raw eggs beaten in a mixing bowl

  • 1/2 cup bread crumbs

  • 1/2 cup butter crackers blended into crumbs

  • avocado oil spray

  • dill for garnish, 100% optional

Instructions:

Into the bowl add cooked egg yolks, mayo, pickles, Dijon mustard, salt, and pepper to taste. Give it a mix with a fork, smashing the egg yolks.

In one bowl add flour. Into another bowl add 2 raw eggs and beat it with a fork. Into a 3rd bowl add bread and cracker crumbs and mix to combine. Coat egg whites in flour, then eggs, then crumbs.

Place breaded egg whites into an air fryer dish lined with parchment paper, and spray with avocado oil. Air fry at 390F for 4-5 minutes on each side, or until golden color.

Spoon egg yolk puree into the center and garnish with dill. Enjoy!
