Creamy Chicken Pasta Bake

 

Cozy, creamy, and made for sharing. This Creamy Chicken Pasta Bake is comfort food at its best!

Ingredients:

  • 2 cups penne pasta, uncooked

  • 2 boneless, skinless chicken breasts

  • 3 tablespoons all-purpose flour, divided

  • ⅓ cup breadcrumbs

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • ¼ teaspoon dried thyme

  • ¼ teaspoon dried rosemary

  • ¼ teaspoon dried oregano

  • Salt and black pepper, to taste

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • ¼ cup white wine

  • 1 cup chicken stock

  • 1 ½ cups heavy whipping cream

  • ½ cup grated Parmesan cheese

  • 1 tablespoon fresh parsley, finely chopped

Instructions:

  • Preheat oven to 375°F. Cook pasta according to package directions; drain.

  • In a shallow bowl, mix breadcrumbs, 2 tablespoons flour, garlic powder, onion powder, thyme, rosemary, oregano, ½ tsp salt, and ¼ tsp pepper.

  • Pat chicken dry, season with salt and pepper, then dredge in breadcrumb mixture.

  • Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 3 minutes per side until golden; transfer to a plate.

  • In the same skillet, melt butter. Stir in the remaining 1 tablespoon of flour and cook 1 minute.

  • Add white wine and simmer 1–2 minutes until reduced by half. Pour in chicken stock; simmer 3–4 minutes. Season to taste, then stir in cream.

  • Add cooked pasta to the sauce. Nestle chicken on top, sprinkle with Parmesan, and bake uncovered 12 minutes, or until chicken is cooked through.

  • Slice chicken, return to skillet, garnish with parsley, and serve.
