2 boneless, skinless chicken breasts
3 tablespoons all-purpose flour, divided
⅓ cup breadcrumbs
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
¼ teaspoon dried oregano
Salt and black pepper, to taste
2 tablespoons olive oil
2 tablespoons butter
¼ cup white wine
1 cup chicken stock
1 ½ cups heavy whipping cream
½ cup grated Parmesan cheese
1 tablespoon fresh parsley, finely chopped
Instructions:
Preheat oven to 375°F. Cook pasta according to package directions; drain.
In a shallow bowl, mix breadcrumbs, 2 tablespoons flour, garlic powder, onion powder, thyme, rosemary, oregano, ½ tsp salt, and ¼ tsp pepper.
Pat chicken dry, season with salt and pepper, then dredge in breadcrumb mixture.
Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 3 minutes per side until golden; transfer to a plate.
In the same skillet, melt butter. Stir in the remaining 1 tablespoon of flour and cook 1 minute.
Add white wine and simmer 1–2 minutes until reduced by half. Pour in chicken stock; simmer 3–4 minutes. Season to taste, then stir in cream.
Add cooked pasta to the sauce. Nestle chicken on top, sprinkle with Parmesan, and bake uncovered 12 minutes, or until chicken is cooked through.
