Cottage Cheese Flatbread

 

From cottage cheese to crave-worthy flatbread! Made with all Boise Co-op ingredients, this viral recipe is as wholesome as it is delicious.

Ingredients:

  • 2 large eggs

  • 1 cup cottage cheese (any fat level; low-sodium recommended)

  • ¾ tsp garlic powder (or garlic powder with parsley)

  • “Everything But the Bagel” seasoning, to taste

  • Avocado oil spray

Instructions:

Blend it smooth

  • Blend cottage cheese, eggs, and garlic powder until completely smooth and creamy.

Prep your baking sheet

  • Line a large baking sheet with parchment paper.

  • Spray with avocado oil spray.

Make perfect circles

  • Use a ladle or large cookie scoop to portion the batter onto the parchment.

  • Create round circles about 5–6 inches wide.

  • Use the back of the spoon to smooth them into even, circular shapes.

  • Sprinkle with Everything But the Bagel seasoning over the top.

  • Tip: Leave space between each circle — they spread slightly.

Bake

  • Bake at 350°F (176°C) for 20–30 minutes, depending on the thickness.

  • They’re done when the edges are lightly golden and the center is set.

  • (If you make them thicker, add 5–10 minutes.)

Cool completely

  • Let them cool fully on the baking sheet so they firm up and stay flexible. Enjoy as:

    • High-protein tortillas

    • Mini pizza crusts

    • Folded breakfast wraps

    • Snack rounds with hummus or cottage cheese

    • Low-carb sandwich thins
