Crispy Beef Tortilla Pockets

 

Crispy on the outside, savory on the inside. These Crispy Beef Tortilla Pockets come together with fresh, flavorful ingredients, all from the Boise Co-op. An easy, satisfying meal the whole family will love.

Ingredients:

For the Filling

• 1 lb ground beef

• 2 tsp Montreal steak seasoning, or favorite steak seasoning

• ¼ tsp turmeric 

• ¼ tsp coriander 

• 1/2 tsp garlic powder (or to taste)

• Sea salt, to taste

• 1 medium onion, finely diced

• ⅓ cup red bell pepper, finely chopped

• ⅓ cup green onions, chopped

• 1 cup shredded mozzarella cheese

For the Pockets

• 5–6 flour tortillas

• 1 tbsp flour

• Water (to make a flour paste)

Instructions:

  • Brown the ground beef in a skillet over medium-high heat. Add the Montreal steak seasoning, turmeric, coriander, garlic powder, and salt. Cook for 5–7 minutes, breaking up the meat as it cooks.

  • Add the onion and cook for 5 minutes. Stir in the red bell pepper and green onions, then cook for another 5 minutes until the veggies soften.

  • Remove from the heat and stir in the mozzarella cheese until it starts to melt.

  • Mix the flour with a little water to make a thick paste. This will act as the "glue" to seal the tortillas.

  • Cut each tortilla in half. Fold one half into a cone or triangle, seal the edge with the flour paste, then fill with the beef mixture.

  • Place on a baking sheet and broil for 1–2 minutes per side until golden and crispy, or bake at 400°F for 12–15 minutes until beautifully crisp.

  • Serve warm with your favorite dipping sauce like ranch, sour cream, cilantro sauce, or sweet chili sauce.
