20-Minute Creamy Chicken Pasta
Dinner is served! This 20-minute Creamy Chicken Pasta is packed with flavor and made with fresh ingredients, all from the Boise Co-op. Quick, easy, and perfect for busy weeknights.
Ingredients:
• 2 boneless, skinless chicken breasts, cut into strips
• 6 oz linguine (or your favorite pasta)
• 2 tsp Cajun seasoning, or to taste
• 2 tbsp butter
• 2 cups heavy whipping cream
• 2-3 tbsp chopped sun-dried tomatoes
• ½ tsp sea salt
• ¼ tsp dried basil
• ¼ tsp black pepper
• ½ tsp garlic powder
• ¼ cup freshly grated Parmesan cheese, plus more to garnish
• Finely chopped fresh parsley, for garnish
Instructions:
Cook the pasta according to the package directions until al dente. Reserve a little pasta water, then drain.
Season the chicken with Cajun seasoning.
Melt the butter in a large skillet over medium heat. Add the chicken and cook for 5–7 minutes, flipping once, until golden and cooked through.
Reduce the heat and stir in the heavy cream, sun-dried tomatoes, garlic powder, basil, salt, and black pepper. Bring to a gentle simmer.
Add the Parmesan cheese and stir until melted into a rich, creamy sauce.
Add the cooked pasta and toss until every strand is coated. If needed, stir in a splash of the reserved pasta water to loosen the sauce.
Garnish with freshly grated Parmesan and finely chopped parsley. Serve immediately and enjoy!
