It's a new year and I want to drink more Champagne! My pick for the "while it lasts" category are these two wines from Zoémie De Sousa. Eric De Sousa, the third generation of this family of Champagne growers and producers, is now at the reigns and is making wines from organically grown grapes. In fact, he has gone to using a horse drawn plow in the vineyards to avoid any tractor exhaust on the vines. This guy is a serious farmer. The Brut Classique is 50 percent Chardonnay, 40 percent Pinot Noir and 10 percent Pinot Meunier. It has a bright citrus quality with very fine bubbles and a bit of yeasty richness to round it out. The rosé is an unu-sual blend of 90 percent Chardonnay with 10 percent Pinot Noir added to the dosage to give it color and fla-vor. This wine shows all the Chardonnay character at first sip, but then the Pinot Noir kicks in to raise the fla-vor bar, making this a real pleasure to drink. BOTH ARE ON SALE WHILE THEY LAST!
