While I have a tendency to choose bubbles and rosés for my staff picks, the night's dinner was to be steak—flat iron with just a touch of salt and pepper, so I decided to aim for a lush red like Syrah. I've always loved Saint Cosme wines, both red and white, and was excited to try a new vintage of their entry level Côtes du Rhone. We like our steak on the rare side, albeit warmed all the way through, juicy and rich. This Syrah paired beautifully with the dinner—bold and well structured, with powerful fruit aromas on the nose, and full dark fruit on the palate. It ended up being one of my better pairings, as the steak and wine balanced each other perfectly.
