Here is a prime example of a delicious and complex wine made with very little intervention. The fruit comes from the Domaine’s certified organic vineyards composed of mostly old vine Grenache and Mourvedre accompanied by smaller amounts of Cinsault, Carignan and Syrah. The wine is also hand-picked, fully de-stemmed, foot-crushed and vinified in large stainless steel vats with indigenous yeasts and no pumping. Then it is bottled manually by gravity on a waning moon, under high atmospheric pressure, all the while avoiding the addition of any enzymes or acidifiers. The result? Fabulousness! The nose bursts with cherries, herbs and spearmint as does the palate. It is juicy with soft tannins and medium body. This wine has the structure to stand up to a steak, roast or lamb but would also be great with a hearty stew or charcuterie and cheese.
