Thanksgiving Favorites: Allergen-free Versions of Your Classic Favorite Recipes!  

Are food sensitivities making it hard to enjoy your family’s favorite Thanksgiving recipes? Bring your kids and learn to prepare nutrient-dense and allergen-free versions of your favorites! We’ll make a side dish for the main meal as well as a scrumptious dessert – showcasing fresh, seasonal whole foods.We’ll be making richly flavored paleo mashed potatoes, a refreshing raw cranberry-orange relish, and a sweet treat of grain-free pumpkin bars. Kids are encouraged to create and sample with us.  Adults are free with paid kid’s registration.  Each child will require a purchased ticket.

Join us for a wonderful hands-on cooking experience with the author of the cookbook Healthy Flavors of Mexico, Jennyfer Aranda, where you will learn to make your own variety of traditional enchiladas!

Enjoy a night full of color, tradition and great flavors. At the end of the class, we will enjoy our enchiladas, mexican beer, and great company.

About the instructor:

Jennyfer received her training at the Institute for Integrative Nutrition in New York City and is the author of Healthy Flavors of Mexico - a lifestyle cookbook that gives healthier alternatives of preparation to many of Mexico’s traditional dishes. During her training at IIN, she studied over 100 dietary theories, practical lifestyle management techniques, and innovative coaching methods with some of the world’s top health and wellness experts.

She has extensive knowledge in holistic nutrition, guiding/coaching techniques, and preventive health practices such as yoga, meditation, and stress reduction. She leads workshops on health and wellness, cooking classes, yoga, nutrition, and hormonal balance.

Class: Holiday Printmaking with Noi

The holidays are just around the corner and if you want to make a statement with gift giving, Printmaking with Noi is the perfect class for you! He will be sharing a fun and easy way to make personalized gifts with potato stamping! There is nothing more exciting than getting some paint out and creating a one of a kind art piece. This simple method for creating stamp art will keep you busy for hours. In this workshop we will be showing you potato stamping – the easy way!

Noi will be teaching the class how to create unique potato stamps to personalized cards, gift wrap, and a reusable tote you’ll be able to take home. At your next gift exchange party, you’ll sure to make an “impression”.

Noi graduated with a bachelors degree at Idaho State University in graphic design with an emphasis in fine art. When he’s not working in Marketing at The Boise Co-op, he loves to paint and do printmaking on his spare time.

All class materials will be provided in the workshop including the reusable tote bag. Snacks, cider and wine (21 +) will also be provided. The class is recommended for ages 12 and up. Please dress accordingly, class is going to be fun, but may get messy. We recommend bringing an apron.

This evening's painting will be "Paint Your Pet". Once you register participants need to email a close-up photo of their pet to: [email protected] Lisa will draw it onto the wood canvas and have it ready for you to paint in class. Please note if you would like your pet drawn with or without a hat, then Lisa will show you how to paint it, step by step. Great gift idea!

Wine Class: Celebrate With Champagne!

When it comes to celebrations, nothing makes the occasion as special as the real deal—Champagne—perhaps the world’s most famous wine.

Join Divit Cardoza as he shares his deep knowledge of this historic region. Champagne, the wine, is named after the region where it is grown, fermented and bottled: Champagne, France. Nestled in the country’s northeastern corner, near Paris, the only labels that are legally allowed to bare the name “Champagne” are bottled within 100 miles of this region (according to European Law). In addition to location, Champagne also receives its distinguished name because of the grapes used to produce it. Grown in a mild climate with chalky and mineral rich soil, the flavor of these grapes is truly unique. 

This tasting will include appetizers and desserts from the Co-op Kitchen.

Class: Candy Canes with Costello!

You've most likely never thought about making candy canes at home, but in this class with Jon Costello, you will learn how!  Jon will show you how to pull sugar using the “wet cooking method”. Sugar can be used for more than sweetening cakes and muffins. When placed in a pan and melted by itself, using the “dry method”, you can make a delicious caramel by adding cream and butter. When cooking using the “wet method” you boil sugar to a much higher temperature and have it remain crystal clear. By using this method, you are able to blow the sugar into a variety of shapes, pull and tie beautiful sugar bows, flowers, taffy, or even sugar sculptures. 

Jon will send you home with recipes, tips and tricks to use when you start working with sugar. After this class he promises that you will be able to awe your friends and family with this very impressive technique!

In Jon's words:

"My name is Jonathan Costello and I grew up in a small town in upstate NY. It was in this small town that I learned from my Nanny how to make ravioli, bake cakes, and even how to pick mushrooms. This love of cooking took me on to The Culinary Institute of America where I graduated as a pastry chef in 2012. Currently I work at the Boise Co-Op as a baker while I finish my Undergraduate Degree in Pre-Med and Chemistry."

Cookin' With Kids: Healthy After-School Snacks

School is in session, and the kids are HUNGRY!  Instead of handing them crackers or a sugary granola bar, give them something homemade that’s yummy and nutrient-dense.  We’ll make No-Bake Grain-Free Energy Bites (with nuts) and Mexican Chocolate Chia Seed Pudding.  Both recipes are grain-free and dairy-free. This will be a hands-on class where the kids will be doing the cooking, guided in small groups by our instructor, Kendy Radasky.

Adults are free with paid kid’s registration.  Each child requires a purchased ticket.

Kendy's classes all include a focus on how to cook and eat well with kids who have food sensitivities.  Most recipes are gluten-free and dairy-free, and some are also egg-free, nut-free, and/or grain-free.  Ongoing, monthly series at the Co-op.

Indian cuisine uses the whole palette of flavors—spicy, sour, sweet, and hot all at the same time—making it something that wants to jump off the plate! With its array of spices and condiments and experimental attitude, Indian cuisine allows home cooks to get creative and adventurous. 

Brunch in India is typically enjoyed on Sundays and consists of a variety of light snacks served along with Chai Tea.  For this class, Sangeeta will demonstrate how to make some of her favorite brunch recipes from different parts of India. As always, she will be adding her own twists and creative approach!

This evening's painting will be "Paint Your Favorite Animal". Once you register participants need to email a close-up photo of their animal to: [email protected] . Lisa will draw it onto the wood canvas and have it ready for you to paint in class.   

Lisa Benson is a professional artist and graphic designer who specializes in still life, animals and landscape acrylic and watercolor paintings. Lisa has been exposed to the arts for as long as she can remember. Her paintings are color-inspired and upbeat. As much as Lisa loves creating and painting, she is also passionate about sharing her knowledge of painting with others as an art instructor at the Boise Art Museum and for her own business - LePaint paint parties. Lisa also taught middle school art for 12 years and worked at CBS Broadcasting as a graphic designer in Seattle before moving to Boise 3 years ago. Lisa believes strongly that “art is therapy” and there are no mistakes in art! Creating art is truly about the process. Lisa says, “LePaint gives me the opportunity to be creative every day. I have found my calling and I love what I do!”

Join us for a wonderful hands-on cooking experience with the author of the cookbook Healthy Flavors of Mexico, Jennyfer Aranda.


In this class you will learn how to make your own variety of traditional ceviches, salads and dressings; made with the great flavors of Mexico. All recipes are delicious, easy to follow, and quick to prepare so you can have your own Mexican fiesta this summer!


Enjoy a night full of color, tradition and great flavors. At the end of the class, we will enjoy our ceviche, mexican beer, and great company.


About the instructor:


Jennyfer received her training at the Institute for Integrative Nutrition in New York City and is the author of Healthy Flavors of Mexico - a lifestyle cookbook that gives healthier alternatives of preparation to many of Mexico’s traditional dishes. During her training at IIN, she studied over 100 dietary theories, practical lifestyle management techniques, and innovative coaching methods with some of the world’s top health and wellness experts.


She has extensive knowledge in holistic nutrition, guiding/coaching techniques, and preventive health practices such as yoga, meditation, and stress reduction. She leads workshops on health and wellness, cooking classes, yoga, nutrition, and hormonal balance.

Have you ever wanted to learn how to make your own fresh marinara and pasta? Real marinara sauce has the taste and juice of fresh tomato, but also a velvety texture with the rich bite of olive oil: even the best jarred sauces can’t pull that off. And because it comes together from pantry ingredients before the pasta water even comes to a boil, it’s a recipe that home cooks should master!

In this class Jon will teach you how to peel and crush your own tomatoes, pick the right seasonings, and how to know when your sauce is ready. While our sauce is bubbling away on the stove, Jon will show you how to make pasta from scratch just the way his own Nanny taught him. You will learn all about how to knead the dough, and learn the difference between too much or too little. This class will help you bring a little bit of Italy right to your own kitchen!

"My name is Jonathan Costello and I grew up in a small town in upstate NY. It was in this small town that I learned from my Nanny how to make ravioli, bake cakes, and even how to pick mushrooms. This love of cooking took me on to The Culinary Institute of America where I graduated as a pastry chef in 2012. Currently I work at the Boise Co-op as a baker while I finish my Undergraduate Degree in Pre-Med and Chemistry."

The term Chaat is used to describe savory snacks, typically served at roadside stalls all over India. These snacks are usually variants of deep fried dough either stuffed or served plain with a combination of yogurt, tamarind, cilantro or garlic sauce.
The word Chaat literally means "to lick", so yes, they are finger licking good!

Join us for a delightful evening with Divit Cardoza! We talked him into coming out of retirement to lead you on a tour of some of the most important wine regions of France.

The tour will include: 

  • Champagne ( the most famous sparkling wine region in the world)
  • Bordeaux, the birthplace of Cabernet Sauvignon and Merlot
  • Rhone Valley, where Grenache and Syrah rule
  • Burgundy, the home of both Chardonnay and Pinot Noir 
  • Loire Valley, where Sauvignon Blanc and Chenin Blanc are Queen

We will also have a surprise or two so join us on our adventure!

Cookin' With Kids: Sensational Salads - Fun & Seasonal!

Let’s play with the fruits and veggies that are in season, and make two yummy salads.  Veggie salads can be just as fun as fruit salads, and when we combine veggies and fruits, things can get really tasty!  We’ll also make a homemade dressing or two, as perfect compliments to our salads.  Let’s celebrate the bounty of the plant world!  Kids are encouraged to create and sample with us.  

Adults are free with paid kid’s registration.  Each child will require a purchased ticket.
